Produce artisan breads, laminated pastries, breakfast items, cookies, desserts, and specialty baked goods for the GCU Bake Shop and multiple campus outlets. Execute three-day production schedules, manage fermentation and proofing, and support recipe scaling, planning, and inventory. Serve as a production professional and educator by mentoring culinary students in commercial baking techniques. Maintain quality standards, comply with food safety requirements (HACCP, Arizona Food Code), and safely operate commercial bakery equipment.

Key Responsibilities

•Produce artisan breads using standardized formulas, including executing three-day bread production schedules (preferments, mixing, fermentation, shaping, overnight retarding, and morning baking).
•Produce a range of pastry and breakfast items (e.g., croissants, chocolate croissants, danish, cinnamon rolls, muffins, scones, cookies, brownies, quick breads, coffee cakes).
•Maintain strict adherence to dough temperatures, fermentation/proofing standards, scoring techniques, and baking specifications; monitor fermentation and adjust based on ambient conditions.
•Prepare daily production schedules, forecast quantities from historical sales, maintain inventory of frozen doughs and par-baked products, and coordinate production with catering and retail demand.
•Ensure quality and food safety compliance (appearance, volume, crust color, crumb structure, flavor, texture, finished weight, packaging presentation) and safely operate and maintain commercial bakery equipment while mentoring culinary students.

Key Requirements

•Associate degree in Baking & Pastry Arts, Culinary Arts, or a related discipline (equivalent professional experience considered).
•Minimum three years of professional artisan bread production experience.
•Experience operating commercial bakery equipment.
•Thorough understanding of fermentation, preferments, sourdough, dough development, and artisan bread production.
•Knowledge of laminated dough production and strong organizational skills with the ability to work independently and mentor student employees.
