Job Summary

Lead the day-to-day operations of the Marks & Spencer Café, driving exceptional customer experience while maintaining food quality, food safety, and operational excellence. Manage and coach the café team, oversee opening/closing and service flow, ensure compliance with HACCP and Health & Safety requirements, and control inventory, food costs, waste, labor scheduling, and commercial performance. Collaborate with the Store Manager and Food Operations teams to achieve operational KPIs and customer satisfaction.

Key Responsibilities

•Lead, motivate, coach, and develop a high-performing café team, including briefings, 1:1 coaching, and performance reviews.
•Oversee daily café operations across trading hours, including opening/closing procedures, cash reconciliation, safe counts, and staffing levels.
•Deliver exceptional customer service by resolving enquiries and complaints, improving customer feedback, and building loyalty through memorable dining experiences.
•Ensure food safety, quality, and compliance with M&S Food Safety standards, HACCP, Municipality regulations, and Health & Safety legislation, including audits and records.
•Manage inventory and commercial performance by overseeing ordering and stock rotation (FIFO), monitoring waste/food costs/expenses, supporting promotions, and maintaining labor scheduling and operational KPIs.

Key Requirements

•Bachelor's degree or diploma in Hospitality Management, Hotel Management, Business Administration, or related discipline (preferred).
•4–6 years of experience in Hospitality, Café, Restaurant, or Food Retail operations.
•Minimum 2 years of experience in a supervisory or management role.
•Strong knowledge of food preparation, food safety, HACCP, and Municipality regulations.
•Proven experience in inventory management, food cost control, labour planning, and waste reduction.
