Key Responsibilities

  • •Ensure outlets are properly constructed, maintained, and operated in compliance with established food safety, hygiene, and sanitation standards.
  • •Oversee dishwashing operations, implement dishwashing procedures, and train staff accordingly to ensure timely and thorough cleaning.
  • •Monitor and control inventory of cleaning supplies and kitchen essentials, coordinate with purchasing for timely restocking, and oversee resort-wide breakage.
  • •Supervise maintenance and cleaning of kitchen equipment, utensils, and dishes; report malfunctioning equipment to the maintenance team for repairs.
  • •Assist with budgeting and CAPEX requirements for the stewarding department, develop cleaning schedules, and conduct inspections to ensure adherence to standards.

Key Requirements

  • •Supervise and lead the stewarding team (dishwashers and cleaning staff) with strong leadership and organizational skills.
  • •Ensure compliance with food safety, hygiene, and sanitation standards, including HACCP principles and relevant food safety/quality standards.
