Key Responsibilities

  • •Pushes out trees of bacon according to average and lot number to the designated Bacon Roller.
  • •Removes belly from tree to table, removes combs from bellies, and neatly sets aside combs onto the rod of the comb truck.
  • •Positions empty flats and stacks bellies in rows and prescribed asides flats; asides empty trees to the smokehouse alley.
  • •Cleans coolers and trims bellies as required; keeps Bacon Rollers supplied with proper sized bacon.
  • •Provides appropriate scaling, record keeping, and inventory rotation; performs other duties as assigned by the crew leader/supervisor.
