Key Responsibilities

  • •Oversee day-to-day operations for all restaurants, bars, nightlife venues, and in-room dining to ensure operational standards and guest satisfaction.
  • •Drive financial performance and profitability for the F&B division, working with the Director and Finance to achieve revenue and cost targets.
  • •Support budgeting, business planning, forecasting, and sales strategies aligned to the company’s commercial objectives.
  • •Implement and continuously improve F&B standards, policies, procedures, and operational strategies across all outlets.
  • •Ensure compliance with FIVE policies, licensing requirements, regulatory standards, and food safety and health & safety legislation.

Key Requirements

  • •Minimum 5 years of senior Food and Beverage leadership experience, ideally in a luxury hotel or lifestyle hospitality environment.
  • •Proven leadership overseeing multiple F&B operations, including restaurants, bars, nightlife venues, and in-room dining.
  • •Demonstrated ability to deputise for the Director of Food and Beverage, taking accountability for operational performance, financial results, and guest experience.
  • •Strong commercial acumen, including P&L management, budgeting, forecasting, revenue generation, and cost control.
  • •Exceptional people-management skills to inspire, coach, and develop a high-performing leadership team across multiple outlets.
