Key Responsibilities

  • •Work alongside and deputise for the Head Chef to develop the culinary service and ensure food is prepared, produced, and served to required standards.
  • •Lead food production and delivery in designated areas, including training, coaching, and supporting staff to deliver an excellent service.
  • •Plan menus and new dishes with the Head Chef; proactively monitor the menu to ensure it stays relevant and meets customer needs.
  • •Assist with operational budgeting, manage costs and margins, and seek opportunities to increase sales while controlling costs.
  • •Ensure compliance with Health and Safety requirements, including stock rotation, wastage minimisation, food stocktakes, COSHH/HACCP/allergen recording, and hygiene standards.

Key Requirements

  • •NVQ in Food Preparation level 3 (or the equivalent City and Guilds qualification).
  • •Substantial proven experience in a food preparation environment, including experience as a chef de partie.
  • •Knowledge of Health and Safety at Work Act, HACCP hygiene and allergen recording systems, COSHH, and a relevant Manual Handling course.
  • •Food Safety Certificate level 4.
  • •Experience of costing menus, recipes, and food ordering; plus supervisory experience (preferably in a food preparation environment).
