Key Responsibilities

  • •Manage all kitchen operations including stewarding, with emphasis on hygienic standards, training, and consistent food preparation and presentation.
  • •Maintain and update recipes and accurate dish costing; develop new dishes and products.
  • •Create and collaborate on menus that offer value for money according to corporate guidelines.
  • •Manage Food Production and Stewarding functions to achieve optimum departmental profit and drive overall quality while controlling value for money.
  • •Ensure compliance with OH&S policies and procedures, uphold duty of care, and maintain up-to-date hotel policies and procedures files.

Key Requirements

  • •Gastronomic education certificate or equivalent (apprenticeship/diploma/BA/Bsc), plus HACCP certification.
  • •Minimum five years in a kitchen management role, preferably with an international 5* hotel chain.
  • •Minimum ten years kitchen experience, with experience in a standalone F&B operation beneficial.
  • •Knowledge of food safety regulations and ability to maintain hygienic kitchen and personal hygiene while complying with local and company legislation.
  • •EU passport or an existing work permit for Latvia, with excellent English communication skills and ability to work in a multinational environment.
