Key Responsibilities

  • •Deliver revenue targets for assigned sites, develop commercial ideas (menus, dayparts, offers, events, partnerships), pilot new income streams, and improve capacity utilisation and yield.
  • •Run portfolio operations by holding venue leadership accountable for performance, standards, compliance, and delivery of approved budgets, labour models, and trading calendars.
  • •Own financial control for P&L and budgets: review forecasts, manage food, beverage, and labour costs, reconcile cash/receipts, and act on variances with corrective actions.
  • •Lead review and reporting cadence across the portfolio, including trading reviews, monthly business reviews, mystery shopper/audit programs, and consolidated reporting to the Operations Director.
  • •Support clients and third-party operators operationally, uphold health & safety and compliance requirements, and lead venue management teams through coaching, development, and recruitment support.

Key Requirements

  • •Track record generating commercial ideas that turn into measurable revenue, with strong revenue and margin instincts including menu engineering, pricing, promotions, and yield management.
  • •Ability to read, interrogate, and challenge financial reports, including P&L, cost control, and labour reports.
  • •Strong leadership capability to motivate and develop teams across multiple locations, including recruitment, training, coaching, and performance management.
  • •Understanding of client agreements and operating obligations, with judgement for what must be escalated versus handled within delegated authority.
  • •Bachelor’s degree (or equivalent qualification/experience) in hospitality management, culinary arts, business, or a related field; fluent English (second language is an advantage).
