Key Responsibilities

  • •Calculate and monitor daily, weekly, and monthly F&B cost percentages, including menu costing versus actual costs.
  • •Establish and validate standard recipes, yields, and portion sizes in collaboration with culinary leadership; conduct portion and waste spot-checks.
  • •Oversee monthly and perpetual physical inventory counts for F&B, operating supplies, and retail stock; investigate theoretical vs. physical variances.
  • •Maintain and update the inventory management system (pricing, recipes, supplier data) and ensure purchasing aligns with forecasts for occupancy and banquets.
  • •Prepare monthly cost control and variance reports, highlighting high-cost, slow-moving, and near-expiry items with actionable recommendations.

Key Requirements

  • •Bachelor’s degree in Finance, Accounting, Hospitality Management, or a related field.
  • •3–5 years of experience in cost control, storekeeping, or purchasing in a hotel or high-volume restaurant.
  • •Strong inventory management skills for food, beverage, supplies, and retail stock with variance investigation.
  • •Proficiency with hotel inventory/procurement systems (e.g., Materials Control (MC), BirchStreet, Adaco, FMC).
  • •Strong analytical and communication skills, with the ability to work under tight month-end deadlines.
