Job Summary

Oversee the Main Kitchen section at One&Only The Palm in Dubai, preparing and presenting high-quality dishes to One&Only standards. Assist with menu items and daily specials, ensure consistency, monitor stock and reduce waste, and maintain strict cleanliness, food safety, and HACCP compliance. Train and supervise junior kitchen team members, collaborate with the Sous Chef and Head Chef, and help manage smooth service, including banquets and high-volume periods.

Key Responsibilities

•Prepare, cook, and present dishes within your designated section according to kitchen standards.
•Assist with the creation of menu items and daily specials, ensuring consistent quality across all food items.
•Monitor stock levels, place orders, minimize waste, and maintain proper storage, labeling, and rotation (FIFO).
•Ensure compliance with food safety regulations, including HACCP guidelines, while maintaining hygiene and sanitation standards.
•Train and supervise Commis Chefs and kitchen assistants and collaborate with the Sous Chef and Head Chef on daily kitchen operations.

Key Requirements

•Minimum 2–4 years of experience in an upscale 5-star hotel or resort kitchen environment.
•Strong culinary knowledge and a solid understanding of food preparation and kitchen operations.
•Excellent interpersonal and communication skills to build strong relationships across the kitchen brigade.
•Dynamic team player delivering high standards of food quality and presentation.
•Proficiency in English is required; knowledge of an additional language is highly regarded.
