Job Summary

Manage and control day-to-day restaurant operations by coordinating FOH/BOH readiness, ensuring staff training, and supporting pre-opening activities for full operational readiness. Oversee service delivery, scheduling, attendance, disciplinary procedures, inventory control, purchasing, and expense management. Own restaurant reporting and financial performance, including P&L, revenue and sales targets, tips management, and weekly/monthly/quarterly reports, while maintaining health, hygiene, and fire-life safety standards.

Key Responsibilities

•Manage and control daily restaurant operations across service, facilities, stock checks/stock takes, and sales.
•Coordinate staffing readiness by ensuring FOH/BOH alignment, training completion, and up-to-date timetables, leave rosters, and attendance registers.
•Coordinate pre-opening activities with related parties to ensure full readiness for staffing, training, stocking, menus, budgets, marketing plan, and other operational aspects.
•Oversee service operations to ensure prompt, efficient, courteous food and beverage serving, and manage working hours scheduling for service staff.
•Own financial and operational controls including P&L, revenue and sales targets, tips management, inventory control, ordering supplies, budget/expense management, and weekly/monthly/quarterly reporting; ensure health, safety and security compliance.

Key Requirements

•Ensure FOH and BOH staff are familiar with daily requirements.
•Ensure all staff training is completed prior to opening and whenever needed to maintain operating standards.
•Coordinate with relevant parties during the pre-opening phase to reach the opening date with full readiness across staffing, training, stocking, menus, budgets, marketing plan, and operations.
•Be responsible for restaurant performance including P&L, and for achieving set revenue and sales targets across both floors.
•Maintain required health, hygiene, and fire life safety standards, including emergency exit and evacuation awareness.
